Chicken and Waffles (Hello Kitty Style!)

Living in Vancouver has provided me with limited exposure to the soul food cuisine of our neighbours down South. Although Vancouver does offer a variety of American-inspired fare, there are still many food adventures that require a trip across the border to discover.

I first heard of chicken and waffles through a show on the Food Network and have always been intrigued with the pairing of fried chicken and breakfast waffles. After an impulsive online purchase of a Hello Kitty waffle iron. I decided to find a recipe online and give this artful combination a try!

I used allrecipes.com to find both a fried chicken and waffle recipe and created my own tomato mayo combination to bring this “sandwich” together.

Fried Chicken Recipe  – This is our go-to fried chicken recipe! Super simple and simply delicious. Crispy crunchy outer layer and a moist, juicy chicken center (all recipes we love get a special post-it space on the fridge).

Easy waffle recipe – There are so many waffle recipes online but I swear by this one. It is a tiny bit extra effort with beating the egg whites but it is worth it! Waffles are crisp and fluffy with just a hint of sweet.

My own special Tomato Mayo recipe:

  • 1/3 cup, of your favourite mayonnaise (mine is Hellman’s Light Mayonnaise)
  • 2 Tablespoons,  Ketchup
  • dash of Sriracha
  • 1/4 cup, finely diced cherry tomatoes

Combine all the above ingredients together and mix well.

Spread the mayo on each waffle, add fried chicken on top (with any additional condiments you would like to include) and sandwich together. Although this may not be exactly what is offered in the American South, it was a hit among my friends. Hope you like it too!

    • Thanks Janine! I found it for a pretty good deal on Ebay. It’s trickier cause it’s not an electronic waffle maker so you will need to moderate the temperature and cooking time on your own. Hope this helps 🙂
