If you’ve ever had the butternut squash ravioli at Cactus Club, you would also scour the interwebs for a recipe on how you can prepare such a dish at home. To be simple and forward, it is amazing! I lick the plate clean.
I tried to create the dish using store-bought ravioli with butternut squash filling and it was not even close to what I was looking for. This recipe by Mario Batali and Martha Stewart is the closest I found to the real thing.
As simple as they make it look, it is not easy making your own pasta. Especially if you don’t own a pasta machine. Rolling out the dough takes some serious forearm strength! I would recommend a good marble non-stick rolling pin if you don’t have the pasta machine. I used a ravioli stamp to make the pasta, there are other ravioli makers out there (ie. trays, machines) that could also do the trick.
It is a lot of work, but the rewards are divine. The sage brown butter sauce is simple and the perfect accompaniment to the pasta. Hope you enjoy!
